Cake
1/2 cup extra virgin olive oil
1/2 cup maple syrup or honey
2 eggs
1/2 cup apple puree (homemade or 100% apples store-bought)
2 cups of almond meal or sunflower seed meal
1 tsp baking powder
1/4 tsp vanilla powder
Frosting
Whipped cream or coconut cream
Maple syrup (to taste)

Method
Preheat the oven to 180 degrees celsius.
Grease a cake tin and line the base with baking paper.
Add the maple syrup and olive oil to a blender and blitz until combined. Then add the eggs and blitz again.
Add the apple puree and blitz. Then, add in the almond meal, baking powder salt and vanilla and mix everything until you have a smooth batter consistency.
Pour into the cake tin and bake for 30-40 minutes, or until the cake is a deep golden brown and a knife inserted in the middle comes out clean.
To make the frosting, add your cream of choice to a bowl and mix together with the maple syrup. Wait until the cake has fully cooled down before icing the cake.
