Ingredients:
500g grass-fed beef, veal, pork or chicken mince
1 onion, diced
1 carrot, diced
2 celery stalks, leaves removed and diced
1 zuchinni, grated
Handful of basil leaves
2 garlic cloves, crushed
1 BPA-free tin of diced tomatoes
4 tbsp organic tomato paste
2 tbsp olive oil or butter
Method:
1. Melt the oil or butter in frying pan over medium heat.
2. Add the onions and cook until soft. Then add the carrot, celery, garlic and zucchini. Cook for 5 minutes or until soft.
3. Add the mince and mix until all browned. Then add the diced tomatoes, tomato paste and basil.
4. Simmer for 20-25 minutes.
Serving:
For 4-6 months, serve folk mashed with a little extra soft risoni or cooked root vegetables.
For 6-9 months serve with cooked pasta stars or risoni for 6-9 months
For 9+ months large wholemeal, spelt or kamut shells, penne or gnocchi so they can either use their hands of spoon to pick up.
As a super healthy version, you can spiralise zucchini to make “courgetti”. Sprinkle with lots of grated Parmesan cheese.
