These are perfect mid-morning or afternoon pick me up! Dried figs and tahini are a great source of calcium, making these balls a great choice for anyone looking to try and boost their calcium levels.
Makes 10-15 (depending on rolled size)
Ingredients:
1/2 cup almonds
4 tbsp tahini (hulled)
1 cup dry figs (chopped)
1/2 cup shredded coconut
1 tsp cinnamon
1 tsp vanilla extract
A pinch of pink salt
Method:
1. Add all ingredients to a food processor and blitz until all the ingredients have broken down and are well mixed together.
2. Mixture will be crumbly, but should hold together when rolled into balls. If it’s too crumbly, add a little warm water to help bring it together.
3. Using a spoon (I recommend a teaspoon) measure out the mixture and then roll into balls and then pop in the fridge/freezer to set for a couple of hours.
These will keep in the fridge for 7 days. The mixture freezes really well so I usually make a double batch and store half in the freezer.
