Drooling over images of thanksgiving turkeys? This 30 minute one pan roast will satisfy the craving without the fuss. Just when you thought this recipe couldn't get any better... There's only one pan to wash up.
Ingredients:
6-8 chicken thighs (with skin and bone)
4 potatoes, cut into quarters
1/2 sweet potato, cut into same side as potatoes
Sprig of rosemary
Punch of salt
Drizzle of extra virgin olive oil @cobramestate
Method:
1. Preheat oven to 180 C.
2. Place all potatoes, sweet potato and chicken pieces into the baking tray and sprinkle with salt, rosemary and drizzle with olive oil.
3. Cook for 30 minutes *For extra crispy skin, turn up to 200C for last 5-7mins
4. Serve with steamed green beans or broccoli with lashing of grass fed butter.
How simple is that!? It’s really worth the extra effort to get chicken thighs with skin on. The skin add extra crunch and stops meat going dry.
